3/4 cup unsalted butter
1 1/2 cups sugar
3 large eggs (room temperature)
1 1/2 tsp vanilla
1 cup sour cream
1/4 cup milk
2 1/2 cups flour
2 tsps baking powder
1/2 tsp baking soda
1/2 tsp salt
2 cups frozen or fresh saskatoons
Preheat oven to 350
With an electric mixer cream butter and sugar until light and fluffy. Add eggs one at a time, add vanilla, sour cream and milk.
In separate bowl combine all dry ingredients.
With mixer on low speed add flour mixture to batter and beat until batter is completely mixed. Fold in Saskatoons.
Scoop batter into paper lined muffin tins. Bake for 25 to 30 minutes.
Makes approximately 16 muffins
